Apicius Culinary School is the very first culinary school in Naga offering four (4) different short courses which includes Diploma in Culinary Arts, Pastry and Baking, Cookery NC II, Fundamental Culinary Arts and Bread and Pastry Production NC II.
I for one have been invited to judge the works of their students and my second one this time is on pastries.
BREAD AND PASTRY PRODUCTION NC II
“This course will provide you with the basic knowledge on preparation of international desserts and basic cake production. Pastry curriculum introduces classic creams, custards, and other fillings, as well as methods of making tarts, mousses and cakes. Baking curriculum explores methods for the preparation of yeast and sweet dough products and students’ learn the importance of baking precision.”
Pastry Chef and “Dessert Queen” Chef Connie Condeno has put all her heart and mind in teaching her students personal techniques and recipes in pastry making and have also inculcated them life values that will be very useful in the near future and ventures.
And the results of her passion were seen with the output of her students. Every bit, every detail, one by one has it’s own story. Almost all were first timers but the fruit of hard work and labor paid off. As if we were judging desserts and pastries from fine dining restaurants or famous patisserie.
Every single one is crafted to almost perfection.
